Food lngredients China and Hotelex exhibition during 24 to 31st March 2017 in Shanghai changed my perception about the use of tea and many ideas came to my mind for the application of Darjeeling teas in ice cream too. So far only macha was the foremost tea used in foods and sweets.

Softness of water and decoration enhances flavours of tea to a new dimension. Being judge of an event which you have never thought about sharpens your facilities of mind to see thru tea to find its hidden properties which were not used so far like the compatibility with other beverages and additives like vinegar, sugar and sea weeds.
