Doke Tea’s Green Diamond Sparkles! – A Little Yellow Teapot Report

Growing tea is a tough business and often one that gets little attention from tea lovers. But your little teapot buddy (me!) is here to fill you in on what is behind many of those tasty teas you love. This is another tea from Doke Tea Garden, which has been around for a number of years and seems to be getting better all the time. This is their Second Flush Green Diamond tea from 2016.

The first thing to note is that we have had this tea sample awhile. It’s been stored away from high heat and in its sealed pouch, so we had hopes that all would be well. It was!

Dry leaves: Mainly whole leaf. Irregular shapes. Dark green color. Fresh planty aroma.
Water temp: 165°F (max.)
1st Infusion: 1 min.

DO NOT OVERSTEEP THIS TEA!

So many tea lovers hate green tea, and the culprit is NOT the tea, it’s the humans infusing it. They use water that is too hot, infuse too long, or use too many tea leaves. We did on this one, and learned our lesson. Fortunately, there was enough to give it another try. Glad we did. Light color, delicate flavor, slightly buttery mouthfeel, no astringency or bitterness.

2nd Infusion: 1 min.

Flavor and color about same as #1 but less buttery feeling.
